Ever had scrambled tofu? I saw loads of people posting about it so just mashed some up in a bowl with a little soy sauce. Brown off on a frying pan.

We have this with a little steamed short grain brown rice, steamed broccoli and squash at least once a week. Usually seasoned with lime juice, olive oil, mint and some fresh green chilli. Really simple and refreshing, great to have a break from richer more complex meals, and the kids love it too. Without the chilli that is 😂
